Worlds Easiest and Best Banana Cake


This truly is the worlds best Banana Cake!

This recipe was given to me by a friend.

Ingredients

250g  Softened Butter                                                       
1 Cup Caster Sugar
3 Eggs
3 Over Ripe Bananas
2 Cups Self Raising Flour (sifted)


Method

Cream butter and sugar with electric mixer.
Add eggs 1 at a time beating well (will look curdled, that's normal)
Stir in Mashed Bananas
Add Sifted Flour
Pour into greased and lined tin, bake for 45 minutes in a pre heated 180 degree oven.
Ice with Lemon Cream Cheese or Passionfruit icing.
Although icing never makes it onto the cake in my house.

Creamy Rice Pudding with Caramalised Pears

 
 A great dessert for whole family. The will love it.

 Creamy Rice Pudding with Caramalised Pears

Serves 4-6 preparation: 15 minutes cooking time: 1 hour 30 minutes

    































15g butter, melted                                                                            
2 cups milk
300ml cream
1/4 cup short grain rice
1/4 cup castor sugar
1 teaspoon vanilla extract or vanilla bean paste
1/4 teaspoon ground nutmeg

For Caramelised Pears
30g butter
4 medium pears,peeled,cored,thickly sliced.
1/2 cup brown sugar
1/4 cup cream

Step 1. Preheat oven 160 degrees celcius. Brush a deep, 6 cup casserole dish liberally with melted butter. Combine all ingredients in dish. Bake covered for 1 hour until rice is creamy and almost tender, stir occasionally. Step 2. Remove lid. Give a stir and cook for a further 30 minutes uncovered. add milk if required.
Step 3. Caramelised Pears. Melt butter in a frying pan over medium heat until foamy. Add Pears and Cook, stir occasionally for 4-5 minutes or until tender and golden. Blend in sugar and cream. Cook, stirring occasionally for 2-3 minutes until sauce thickens slightly. 
Serve pudding topped with pears.

Becs Tip
Replace fresh pears with 825g tin pears.
Already tender and the chopping has been done!
